Sunset Cookbook
Basic spice bread recipe?
My mom's cookbook recently disappeared magically and so I decided to look on the internet for a basic spice bread recipe. I was amazingly surprised to see that I couldn't find one. I found cinnamon spice bread, honey spice bread, pumpkin, zucchini, and a bunch of others, but I can't find just a basic spice bread recipe. I also checked Martha Stewart's website and the Sunset website. If you could post a recipe or a link to one I would be very appreciative.
Spice Bread
1 cup water
1/4 cup (1/2 stick) butter, softened
1 teaspoon salt
3 cups bread flour
1/4 cup nonfat dry milk powder
1/4 cup packed light brown sugar
2 teaspoons ground cinnamon
1/4 to 1/2 teaspoon ground nutmeg
1/8 to 1/4 teaspoon ground cloves
2 teaspoons active dry yeast
Measuring carefully, place all ingredients in bread machine pan in order specified by owner's manual.
Program basic cycle and desired crust setting; press start. Remove baked bread from pan; cool on wire rack.
Note: The spicy-sweet flavor of this loaf makes it a wonderful breakfast bread. The flavor is especially good when the bread is served toasted.

Spice Bread, French style

2/3 cups dark honey
1/4 cup dark brown sugar
1 cup cream or milk
1/2 cup butter
2 cups flour
2 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1/2 tsp anise seed, crushed
1/4 tsp coriander ground
1/4 tsp cardamom ground
pinch nutmeg
pinch cloves
pinch salt
Grated zest of 1 orange
1 x egg, lightly beaten
Put the honey, sugar, milk, and butter in a saucepan and bring to a boil.
Sift the dry ingredients and stir in the zest. Make a well in the dry ingredients.
Put the egg in the well, and whisk in the honey and milk mixture, gradually drawing in the dry ingredients to make a batter.
Pour into a greased and floured loaf pan and bake at 350°F/175°C until a toothpick inserted in the center comes out clean, 50 minutes.
Cool.
Wrap in plastic, and store a few days before serving (the few days of sitting gives the honey flavor time to mature, and the cake tastes even better).
