Jam Recipes
I am looking for a Strawberry Jam recipe that uses pectin, but I only want to make a very small amount of jam.
I just want a simple strawberry jam recipe that uses pectin. I dont want a huge recipe that makes so many pints of jelly, just a 2 pint jelly recipe if anyone has one.
I prefer to use powdered pectin for strawberry jam because it sets better than liquid pectin. Liquid pectin is extracted from apples and powdered pectin is extracted from citrus fruits. The pectin box has recipes on a leaflet inside the box for making jam, jelly or preserves from the more common fruits/berries. Each recipe makes only about 4 pints of jam, jelly or preserves. It will vary a little depending on the fruit or berry. You run the risk of failure if you divide the recipe in half. Jam/jelly recipes w/ pectin are like most candy recipes (especially fudge) in that halving, doubling,etc. the recipes usually leads to failure.
There is a brand of pectin called Pomona. This pectin is different than Sure-Jell, MCP, Ball, Certo, etc. It has been modified to be set with a calcium compound plus an acid such as lemon or lime juice, rather than by sugar plus lemon or lime juice like regular pectin. I personally use this pectin almost exclusively now. It allows for no added sugar jam/jelly recipes, but can be made with sugar, honey, Splenda & stevia. You can even use fructose and corn syrup which would cause a regular pectin recipe to fail. The recipes for Pomona pectin can be divided or multiplied. Pomona brand pectin is available at most health food stores and many supermarkets. Per package the cost is about 2x that of regular pectin. However one package of Pomona makes 1 1/2x to 2x the amount of one package of regular pectin. Commercial manufacturers of jams/jellies and other confections have been using the pectin that is in Pomona brand pectin for about a half century. It has been only in the last 5 or so years that Pomona has been packaging the pectin for home users.
